Store-bought Greek yogurt, Instant Pot yogurt, cold start yogurt, or coconut milk yogurt all work well.
- To Sweeten & Flavor: Adding pure maple syrup (or honey) and vanilla extract will sweeten and flavor the yogurt, yet use much less sugar then most brands of Vanilla yogurt.

Sweeten the Yogurt
Yes, you can simply use vanilla Greek yogurt to make yogurt bark, but many brands have added stabilizers and are overly sweet. I prefer to use maple syrup or honey and vanilla extract to give the yogurt just the right amount of sweet vanilla flavor.
Thinly Spread Yogurt & Add Toppings
Using an offset spatula spread the yogurt in an even layer on a baking sheet that has been lined with parchment paper or a silicone baking mat, which will prevent the yogurt from sticking to the baking sheet. Sprinkle the yogurt with berries or toppings of your choice.
Freeze Until Solid
Place the baking sheet into the freezer and freeze until solid. Overnight is best. Once frozen, turn the bark out onto a cutting sheet and remove the parchment paper.
Cut or Break Yogurt Bark
Once the yogurt bark is frozen solid, remove it from the freezer, peel off the parchment paper, and break or cut the bark into large chunks.

Instructions
Line a rimmed quarter-sheet pan with parchment paper and set aside.
In a medium mixing bowl, combine the yogurt with the maple syrup and vanilla extract.
Using an offset spatula spread the yogurt in an even layer on the prepared baking sheet. Sprinkle evenly with berries or toppings of choice.
Place baking dish into freezer and freeze for at least 3 hours, or overnight, until frozen solid.
Once frozen, remove the pan from the freezer, invert the bark onto a cutting board and remove the parchment paper. Break or cut the bark into 12 pieces. Serve immediately, or place into a freezer safe container and store in the freezer for up to 1 month.
